Grilled Courgettes with Satay Dip

An ancient Chinese proverb adapted for Western appeal goes something like this: “You can’t make everyone happy. You’re not a Jar of peanut butter.”


Well, I’m here to tell you that with this peanut butter-based recipe, you can make everyone happy – well, at least the ones who don’t have nut allergies!


What I love about this quick and easy recipe, apart from the fact that it’s ridiculously straightforward to make, is that it also qualifies as a guilt-free snack. A snack that positively encourages you to lounge in front of the TV and watch box sets (although box sets don’t technically come in boxes anymore – they’re mainly streamed).


But first … a quick joke:


Q: “What’s a shark’s favourite type of sandwich?”

A: “Peanut butter and jellyfish, of course!”


Ingredients


3 x large courgettes

1 x jar of peanut butter (smooth or crunchy)

1 x can of coconut milk

1 x big splash of soy sauce

Chilli flakes - optional


Method


Scoop out half of the peanut butter from the jar and put in a saucepan. Add the coconut milk, a big splash of soy sauce and heat until it all combines and begins to bubble. Remove from the heat and put to one side - that’s your satay sauce ready!


For the courgettes: wash them and cut them into thick rounds at an angle (check out the picture!). There are many different ways to grill them: you could put them on a BBQ if you like, use a skillet on the stove – or like me – put them inside a lightly oiled sandwich maker.

For best results, heat the pan/skillet/grill, lightly oil the courgettes, and cook for a couple of minutes on either side or until distinctly marked but still crunchy and firm.

Serving


For that gourmet look, pour the satay sauce onto the middle of the plate and smooth out with a spoon. Then take your courgette slices and stack them like you were building a wall or Jenga tower.


Pro Tip 1:


These are great as a starter for a fancy meal as they have a visual appeal and excellent colour differential - and they’re tasty as well! They are also a great snack alternative to popcorn or crisps for film nights.


Pro Tip 2:


Use the remaining half of the peanut butter in the jar to make peanut butter and jelly (jam) sandwiches. That’s the starters and dessert taken care of in one go!

Q: “Why are peanuts afraid of leaving the house?”

A: “They worry they’re going to get a-salted!”
