Salmon, Cashew, Cos, and Chia Seed Salad

Oh, For a Good Salad!
In my forever bid to lose my excess stomach and retain a modicum of fitness, I’ve been munching on a lot of salads.
Much to my surprise, I’ve managed to keep coming up with lots of variables on the salad theme that has prevented me from feeling like the proverbial rabbit condemned to eat rabbit food.
This one is quick, easy, and has two ingredients I don’t usually use – cashews and chia seeds: both of which add crunch, texture, flavor, and a variety of health benefits.
Here are a few quick reasons why you should include cashews and chia seeds in your diet.
Cashews:
Low in sugar
Rich in fiber
Loaded with heart-healthy fat and plant protein.
They also have a good dose of magnesium, copper, and manganese, which help with energy production, brain health, immunity, and bone health.

Chia Seeds
Low in calories whilst delivering massive amounts of energy
Loaded with antioxidants
High in fiber and protein
Also high in Omega-3 fatty acids

Ready to make salad?
Ingredients:
1 x Romaine lettuce (cos)
1 x salmon fillet
A handful of nuts
A sprinkle of chia seeds
1 x beefy tomato
Olive oil & balsamic vinegar as dressing
Method:
Wash your tomato and lettuce. Coarsely chop the romaine lettuce and tomato and transfer to a bowl. Poach the salmon on the stove until the bright pink turns to mellow pink. Drain the water, cool, and add to the salad bowl in flakes.
Serving:
This part is ridiculously easy! Transfer salad from the bowl and heap on your plate. Sprinkle over the chia seeds and cashews. Drizzle your dressing. That’s it, done!

Did you know chia is the ancient Maya word for strength? (The Mayans loved their chia seeds).
Pro Tip:
This dish stores well in the fridge. Why not make a bulk batch and eat for three or four days straight? Or you could invite friends over to admire your salad-making skills (You might feed them as well if you’re feeling generous, as just taking salad out of the fridge, showing it to your friends, and then putting it back in the refrigerator again might be a bit weird!).

I ran out of toilet paper the other day, so I had to start using lettuce leaves instead … today was the tip of the iceberg!
