Mindful Content: Quick & Easy No. 23 - Polish Cake

Chocolate is the answer; now, what was the question?

Sometimes, you have to indulge, right?


Every now and then I get nostalgic for a once-favourite childhood food – especially if the recipe involves chocolate! I’ll be minding my own business and then ‘POW!’ I get a strong image in my mind of something I used to love eating but haven’t tried for a while. In these instances, I do the sensible thing and ring my mum to send me a recipe. Here’s one for Polish cake (thanks, mum!). By the way, no one in my family is Polish; we just happen to like the way the Polish make their cakes!


This Polish cake requires no cooking and only fifteen minutes to prepare; in fact, it’ll take you longer to eat it than to prepare it! Here’s what to buy and how to prepare it.


Ingredients (makes lots — depending on how much you eat ;))


— for the cake


300g of digestive biscuits

150g of butter

3 x tablespoons of quality cocoa powder

3 x tablespoons of honey

3 x tablespoons of raisins


— for the topping


200g cooking chocolate

250ml of cooking cream

3 x tablespoons of sugar

100ml of milk


Preparation Method


First, grease a baking tin with plenty of butter (I used one with a removable bottom).


Next, place your biscuits in a plastic bag and take your anger out on the biscuits by crushing them with a rolling pin or wooden spoon – but only beat lightly, as you want biscuit chunks and not biscuit dust (think a medium-bad day on the office)!


Afterwards, melt the butter, sugar, cocoa powder and honey in a pan on low heat on the stove, then take off the stove and mix in your biscuits and raisins with a wooden spoon.

Press the mixture into your baking tray with a spoon and put the tray aside.


For the topping, melt the cooking chocolate on low heat on the stove; pour in the sugar, cream, and milk once melted. If the chocolate topping is still too thick, slowly add a little milk to thin to the required consistency — when the mix cools, it will naturally thicken.


Pour the mix over the top of the biscuit mix and once cooled, place in the fridge until ready to consume.


Serving


On a plate and great with a tea or coffee.


Pro Tip:


Add walnuts, sultanas and Maraschino cherries to the biscuit mix for extra indulgence.

Mindful Wisdom


Today, I’ll live in the moment, unless the moment is unpleasant, then I’ll go and eat chocolate instead. If the moment I return back to is still unpleasant, I'll return and eat more chocolate. Repeat as necessary :)
