Comfort Food!
What should you do with that bag of lentils that’s been sitting at the back of the cupboard for, like, forever?
Well, check out this easy lentil curry recipe and get ready for a taste revelation. Not only is this recipe super-tasty and great comfort food, it only has three stages of preparation! Check it out!
Ingredient (8 portions)
4 x cloves of garlic
1 x red onion
2 x tsp of turmeric
2 x tsp of curry powder
1 x tsp of cayenne pepper
1 x can of chopped tomatoes
1 x can of coconut milk
2 x cups of red lentils
5 x cups of water
1 x bunch of coriander
1 x tub of Greek yoghurt
Preparation Method
1. Chop the garlic and onion, then saute in a pan with all the spices,
2. Add all the remaining ingredients apart from the coriander and yoghurt,
3. Simmer for 30 minutes or until the lentils are soft. That’s it!
Serving
This lentil curry is best served in bowls with a healthy dollop of Greek yoghurt and plenty of chopped coriander.
Pro Tip:
This lentil curry goes great with naan bread, garlic bread or crusty village bread smothered in butter as a side accompaniment.
