Why Quesadillas?
Well, really, why not Quesadillas? First up, they are super-tasty. Second, they are easy to make. Three, they are a great comfort food. Fourth, they are essentially an exotic cheese toasty. Fifth, offering someone Quesadillas sounds like it involves more effort than offering a cheese sandwich. Sixth, they are a great sharing dish or party food. Seventh, did I mention they are super-tasty?
Ingredient (6 portions)
1 x pack of large tortillas (6 – 10 tortillas)
I x pack of grated mozzarella cheese
½ x bunch of coriander
2 x jalapeno peppers
1 x lime
3 x large tomatoes
½ x red onion
1 x green pepper
Seasoning
Preparation Method
There are essentially three parts to this tasty delight.
1. Make a salsa mix
2. Load the mix into the tortillas
3. Toast the quesadillas
For the salsa mix.
Have a bowl to hand.
Coarsely chop your tomatoes, dice your onion, deseed your pepper and coarsely chop, wash your coriander and also coarsely chop and put everything in the bowl. Also, chop your jalapenos and add them to the bowl (or cheat and use a variety that is preprepared).
Next up, squeeze the lime juice over the mix and season.
If you like your salsa quite coarse, leave as it is, or if you prefer a more blended mix, then add to a food processor and pulse blitz for a bit to get the required texture. I like mine coarse and not involving a food processor.
Loading the tortillas
Now that the difficult part is out of the way, we can move on to the easy bits.
First up, take your tortillas out of the packet and arrange on a flat surface.
Next, smear the salsa mix over the tortilla, and then sprinkle with plenty of cheese.
To finish, fold the tortilla in half to form a semicircle.
Your quesadillas are now ready for toasting!
Toasting
Now for the business end of the process.
If you have a sandwich maker or griddle, then heat it up and load up with as many quesadillas as you can fit in.
If not, heat the oven grill, and toast the quesadillas. If you’ve ever made a toasted cheese sandwich, use the same method!

Serving
Now for the good part. Take you quesadillas out from the toaster or grill and cut each semicircle in half to form a quarter circle.
Load them up on a plate and enjoy your Latin American cheese toasty!
Pro Tip 1:
Quesadillas go great with guacamole as a side dip.
You can also load them with crème fraiche before toasting if you’ve added too much jalapeno.
Or conversely, if you like a hot dipping sauce, take some of the salsa, add a batch more jalapeno and blitz to make a hot dipping sauce. Awesome!
Pro Tip 2:
If you butter the outside of the tortilla before adding to the grill, you’ll get a very indulgent Quesadilla.

Wisdom
During times of Covid, you should stay at least six feet away from someone who’s just eaten Quesadillas. This is known as Salsa-distancing!
