A Hearty Fish Stew

What could be more comforting than chunks of fish and root vegetables in a rich and spicy tomato and coriander sauce? There’s no need to think too hard about it, as it’s a rhetorical question … nothing is more comforting!

For this week’s quick and easy recipe blog, I’m going big on flavour whilst spending minimal time in the kitchen. Here’s the ingredients list, method of preparation and serving suggestions. Read on!

Ingredients


1 x Spanish onion

3 x large carrots

2 x sweet potato

3 x cloves of garlic

2 x fillets of white fish

1 x tin of butter beans (or any white bean)

1 x can of chopped tomato

1 x small tub of tomato paste

1 x bunch of coriander

2 x vegetable stock cubes

Vegetable oil

Paprika, black pepper and salt as required

Method


This is super easy! Just peel, wash and roughly chop the root vegetables into cubes and then saute in a large pot on the stove on medium heat for a couple of minutes, then chuck in the garlic and seasoning.


Next, add the tin of tomato, tomato paste and stock. Rough cube the fillets of white fish and the coriander and add these as well, along with the white beans.


Simmer and reduce the liquid on a lower heat until all the vegetables are softened and the fish is cooked.


Adjust seasoning and let it simmer away until you’re ready to eat.


Serving Suggestions


Ladle it into big bowls and eat with chunks of crusty bread smeared in butter. Great comfort food. And the best part? It’ll last you for days and taste even better the next day!


Pro tip 1: reserve some coriander and use as a garnish to give the fish stew that restaurant look.


Pro tip 2: serve it cold on a hot day and hot on a cold day.


Pro tip 3: don't forget the crusty bread with butter!
