Poached Salmon with Wilted Swiss Chard, Sweet Potato & Stewed Tomato

Ingredients (for 2 people)
2 x fillet of Salmon
1 x bunch of swiss chard
1 x sweet potato
1 x tin of chopped tomatoes
1 x lemon
Cooking oil
Nutmeg, salt, pepper
Bay leaf
Method
Wash your potato, lightly cover in cooking oil and stick it in the oven to bake. Remove it once soft in the middle. Also, wash the chard and put to one side.
Fill a pan with water and drop the salmon fillets in with a big squeeze of lemon and add the bay leaf. Keep on a low heat and poach the salmon until pink all the way through. Remove from the water and put to one side.
Dry the pan and get ready to use it again. Place it on a medium heat with some oil, drop in the chard and season with nutmeg, pepper and salt. Remove when it begins to wilt.
Open a tin of chopped tomatoes (you can make tomato sauce from scratch … but I prefer quick and easy!
Serving
Spoon chopped tomatoes on to a plate. Cut the sweet potato in large medallions and place in the centre of the plate. Heap on the wilted chard. Place on the fillet of salmon. Add lemon to decorate!
And that’s it! No difficult technical ability required. All healthy and nutritious ingredients. Minimal prep time. Hardly any washing up. Easy to make it look fancy on the plate if you are out to impress.
Pro tip 1: you can use spinach instead of chard. And no need for the potato if you’re cutting down on carbs.
Pro tip 2: remember, chopped parsley or coriander on any dish makes it look fancier! Or try a poached egg on top!
