Stirfry Vegetables with Flaked Mackerel

When did you last get your wok on? It’s been a while, huh?
If you fancy eating a fresh and healthy dish packed full of flavour whilst spending hardly any time at all in the kitchen, then this dish will be right up your avenue.
Why cook this dish?
It’s easy to prepare – just chopping, really.
It’s easy to cook – you only need a wok and some elbow grease.
It tastes great – crunchy vegetables – yum!
It’s healthy – super-healthy.
Ingredients (4 persons)
1 x pack of baby corn
1 x red pepper
1 x Spanish onion
1 x head of broccoli
1 x bunch of coriander
6 x cloves of garlic
Big splash of soy sauce
Small splash of oyster sauce
2 x pre-cooked mackerel
Vegetable oil
Method
1. Wash your veggies. Then roughly chop them up and place in a bowl. Wash your coriander, roughly chop and stick that in a separate container. Finally, flake your mackerel and put to one side. Phase one completed!
2. Now that you’re all prepared, place a wok on the stove, add a big splash of cooking oil – you can use sesame oil if you prefer – and let it get hot. Chuck in your veggies and stir and fry until they are looking a little cooked. This process should take between three to five minutes only. Towards the end, throw in the soy, oyster sauce and the mackerel and take directly off the stove.
You sir or madam, are done with the cooking!
Serving
Spoon the mixture into bowls and garnish with heaps of coriander. For me, I prefer eating stirfry with chopsticks, on the sofa, in front of a good movie, but, you know, at the table would also work… whatever floats your boat.
Remember, this dish is super-healthy, super-tasty, and super-easy to prepare. And it can be prepared in advance and be kept in your fridge to wok-it at a moment’s notice.
Pro tip 1: Make a double batch and keep the raw vegetables in the fridge. Then toss the vegetables into a wok whenever you feel hungry.
Pro tip 2: If you like spicy, chuck in a bunch of chopped red chillis. Let’s give it some heat!
Pro tip 3: Don’t limit yourself to the above-suggested ingredients – courgettes, carrots, beansprouts, bamboo shoots, lemongrass, and bok choy all taste great when stirfried.
Pro tip 4: I like me mine with olives 🫒 It makes it a kind of Mediterranean-Asian fusion dish (stir-fry meats mackerel and olives). Happy wok-ing
