Stuffed jacket sweet potato with a tomato base



For those of you wanting to be in and out of the kitchen in no time and carrying a delicious and healthy meal in your hands, read on!


Wash, then lightly oil a sweet potato with virgin olive oil and stick it in the oven to bake on a high heat for twenty minutes. Meanwhile, mix plain Greek yogurt with arugula, tuna and seasoning. When the jacket is done, slit down the middle and pile in the mix. For presentation and taste, open a tin of pureed tomato and put on the plate. Ridiculously simple and super tasty.


Pro tip: batch cook potatoes and the mix and it’ll feed you for days. Feed the body to feed the mind!
